Rapunzel's journal will be laid out on her bed next to the pencils and pastels she was using to draw in it before the incident. That picture appears to be a sketched outline of Pascal and Gundam's hamsters playing together.

There aren't many specific notes to follow. Most of the pages in her journal are taken up with pictures. A few are of the areas around town, some of the various plaques and the names of the revealed roles beneath them, but most are of the different people around town. Some are already colored in and finalized like the picture she drew of Tony Stark when they met in the park while others are from events that had occurred around town or during the trials that she remembered.
